Healthy flapjacks


Traditionnally, flapjacks are made with oats, butter and sugar. But ! Healthier alternatives are as good, easy to bake and are packed with much much more nutrients.

Below is my version of the recipe, that give a lot of space for your creativity and cupboard resources.

Ingredients:

2 ripped bananas

100g rolled oat or oat bran

1 tablespoon apple puree (no added sugar)

1 handful dried apricots

5 dried prunes

optional : a handful of nuts of your choice


Instructions:

Preheat the oven at 180°c.

With a little bit of butter or coconut oil, grease a medium size oven dish.

Chop dried fruits in small cubes.

With a fork, smash the bananas directly in the oven dish. Add oats, apple puree, chopped fruits and nuts. Mix well.

Put in the oven for 35-40 minutes.

Let it cool before slicing into bars


Tips: Be creative with this recipe! I also love to use 2 tbsp almond butter + a big handful of smashed blueberries instead of apple puree and dried fruits. For consistency, keep in mind to replace apple puree by 2 tbs of any nut butter, especially if you use juicy fresh fruits.
